Halloween

As Halloween is approaching we thought we would share our Skulls & Roses cake to get everyone in the Halloween spirit.

The skulls were modelled out of fondant mixed with Tylose powder to ensure that they set rock hard and held their shape. They were then dusted with some black petal dust to give them the extra dimension and definition.

The roses and leaves were also made from fondant mixed with Tylose. We prefer using fondant and Tylose for sugar flowers however you can also use flower modelling paste. It really depends on what you find works best for you.

The web pattern was hand piped using royal icing. You can either make royal icing from egg whites and pure icing sugar, or you can use a pre made mix that you add water to.

We used several of our products to create this cake including;

Eye Spy with My Little Eye......Cake Pops!!!!

We had a little bit of fun last week creating some Cake Pops using our new coloured edible icing eyes.

Lydia was in charge of bringing a sweet to a Greys Anatomy fancy dress trivia night, so she decided to bring something a little different. It was only fitting that she make Eyeball Cake Pops to tie in with the surgical theme.

I am sure you would agree that they really looked effective and the assorted coloured icing eyes added a fun element to each Cake Pop:)

Not only did they look great but they tasted amazing too. They were chocolate and coconut and I have to confess I may have had a couple too many to eat.

In order to create these cake pops we used a range of our great cake pop products including;

Clikstix in Action

We created the details on this cake by using a few of our Clikstix tools and wanted to share the results.
We would have to say that our decorating time was halved by using the Clikstix, especially when creating the cherry blossoms. We were able to cut approx. 15- 20 cherry blossoms at one time instead of individually cutting each one.

In order to get the added dimension to the Blossoms we used a petal pad and a balling tool.  We placed the blossoms on the petal pad once they had been ejected from the Clikstix. Then used the balling tool to gently press in the centre of the blossoms to pop up the sides.  It helps if you add some Tylose powder to your fondant before using so that the Blossoms will set and hold their shape.
The Bithday message was created using the Script Font and again they were so easy to use. The back ejector really allows the letters to be released without difficulty. The key to using the Script Clikstix is to make sure that your fondant is a thin as possible and you leave the fondant to dry a little before cutting the letters.

We highly reccommend the Clikstix and are happy to answer any questions about this great product:)

Charity Cake for Bear Cottage

We were honoured to help celebrate Bear Cottage's 10th Birthday over the weekend by creating a cake for their special day.

Bear Cottage is a place where children with terminal illnesses and their families can stay from time to time and receive rest and medical care in a homelike environment. It is the first of its kind in NSW and all the staff and volunteers make it possible for families to spend much needed time together in tranquil surroundings.

We hope that our Castle Cake was able to add to the Birthday celebration and that the day was a great success.  Thank you to Bear Cottage for involving us in this special occasion.

We were able to put a range of our cake decorating supplies to good use for this cake including;

Clikstix Demonstration

We have created our first online demonstration on how to use Clikstix. We are really excited by these cake decorating tools and we thought we show everyone how great they are.

Like many decorators we have been using various strip cutters to create our customised messages on cakes. In was not until we used the Clikstix that we realised how inferior these other cutters are. The key feature of Clikstix is the ejector function on the back which makes it so easy to punch out the letters and shapes.

Our tutorial shows the step by step process on using Clikstix and we are confident that everyone will be impressed by the results.

The complete range of Clikstix can be view on our website

A Wedding Cake to Remember

This week is definatley one to remember. It not only has been one of the busiest cake decorating weeks but also one of the most rewarding cake decorating experiences we have had. It is not often that you get a weddding cake order that uses more than 15kg of cake mix, over 200 hours to create and requires approximately 1500 handmade sugarflowers.

The 1500 sugar flowers were definately one of the key components to this design . Lydia handmade all of these and her secret to success was not only her talent but also creating them from fondant as apposed to modelling paste. Like most cake decorators we have been using modelling paste/gumpaste to create our sugar flowers for years however sometimes the paste can be overly sticky to work with and some batches fail to set properly. Lydia found that using fondant mixed with the clear gel worked really well and the sugar flowers all set perfectly even in all this humidity. We are extremely happy with how it all turned out!

Please feel free to send us any questions on the making of this cake design

Happy Decorating,

Aimee
